How to make Cordyceps Flower Pork Soup

You probably don’t want to eat raw Cordyceps flowers. These flowers look like strands of finely chopped onions, only brown in color. The best way to consume the mushroom is by mixing it in pork soup. The following mouth-watering recipe will help you make a pot of this soup where you can enjoy the health benefits of Cordyceps mushroom.

Ingredients:

  • 6 cups water
  • 2 tsp of Cordyceps flower
  • 1 lb of pork cut into 1″ pieces
  • 1/2 cup cooking wine
  • salt
  • ginger slices

Cooking tips:

• Cook pork thoroughly, it will soften as it stews, especially with cooking wine.
• Boil the soup for at least two to three hours. This will dissolve more nutrients from the Cordyceps flower into the soup.

Cooking process:

1. Wash the pork thoroughly. Chop it into 1/2″- 1″ pieces. Very small pieces may dissolve in the soup after you add cooking wine.
2. Take at least six cups of water in a pot. Bring it to boil. You can use more water if you want. Blanch the pork pieces in the boiling water for at least five minutes.
3. Skim the foam from the pot. The foam will make the soup muddy, making it taste inconsistent. Remove the pork pieces from the pot and rinse them with cold water. Keep the pork pieces aside.
4. Add cooking wine in the pork stock left in the cooking pot.
5. Add some salt to this stock. Stir the mixture well. Taste the soup and bring it to boil. You can boil this solution for fifteen to twenty minutes. Cover it with a lid so that the quantity doesn’t reduce.
6. Return the pork pieces to the pot.  Add Cordyceps flowers and slices of ginger.
7. Bring to boil and simmer covered with a tight fitting lid.  Many people allow the stew pot and its contents to simmer for three or four hours.
8. Uncover the pot and allow the soup to cool.
10. Serve with a pinch of pepper.
